Caribbean Grill Basket Scallops

Ingredients

  • 2 tablespoons butter, melted
  • 2 tablespoons fresh orange juice
  • 1 teaspoon Caribbean or Jamaican jerk seasoning
  • 1 teaspoon grated orange peel
  • 1/8 teaspoon crushed red pepper flakes
  • 1 lb. (13 to 16) fresh sea scallops, drained

    Heat grill. In medium bowl, combine all ingredients except scallops; mix well. Add scallops; toss to coat.

    When ready to grill, with slotted spoon, place scallops in grill basket; reserve butter mixture. Place basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 3 to 8 minutes or until scallops turn opaque, turning and brushing twice with butter mixture. Discard any remaining butter mixture.

  • Grill baskets make it easy to turn or mix foods, and they keep smaller foods from slipping through the grill grate. A sheet of double heavy-duty foil, poked with several holes, performs the same function.
  • For Caribbean Grill Basket Shrimp, use 1 1/2 pounds of peeled and deveined large shrimp in place of the scallops. Cook the shrimp just until they turn pink.
