tablespoons fresh orange juice

teaspoon Caribbean or Jamaican jerk seasoning

teaspoon grated orange peel

teaspoon crushed red pepper flakes

lb. (13 to 16) fresh sea scallops, drained

Directions

  1. 1 Heat grill. In medium bowl, combine all ingredients except scallops; mix well. Add scallops; toss to coat.
  2. 2 When ready to grill, with slotted spoon, place scallops in grill basket; reserve butter mixture. Place basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 3 to 8 minutes or until scallops turn opaque, turning and brushing twice with butter mixture. Discard any remaining butter mixture.
