Caribbean Grill Basket Scallops

Ingredients

tablespoons butter, melted

tablespoons fresh orange juice

teaspoon Caribbean or Jamaican jerk seasoning

teaspoon grated orange peel

teaspoon crushed red pepper flakes

lb. (13 to 16) fresh sea scallops, drained
  • 1 Heat grill. In medium bowl, combine all ingredients except scallops; mix well. Add scallops; toss to coat.
  • 2 When ready to grill, with slotted spoon, place scallops in grill basket; reserve butter mixture. Place basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 3 to 8 minutes or until scallops turn opaque, turning and brushing twice with butter mixture. Discard any remaining butter mixture.
