To cook potatoes bring a large pot of water to a boil and add salt. Add the potatoes and cook until the potatoes are just tender but not fully cooked, 8 to 10 minutes. Remove the potatoes from the water and place on a towel to dry and cool. Once the potatoes have cooled enough to touch, slice them into ¼-inch slices.

I made this recipe for my husband because we had a potato pizza in a very posh pizza place and he would not stop talking about it. This pizza was very good and tasted just as good as the pizza from the restaurant but cost less than half of the price. My oven temperature is probably off but I had to bake it for a few minutes longer. Also, I used half of the potatoes because I couldn't find really small red potatoes. I would recommend this recipe and serve it with a small baby green salad with balsamic dressing. Very tasty!
