Caramelized Apples and Ice Cream

medium Granny Smith apples

tablespoons butter

cup firmly packed brown sugar
1/4
cup sweetened dried cranberries

teaspoon cinnamon

tablespoons apple juice
2
tablespoons apple brandy or brandy, if desired

pint (2 cups) Vanilla Ice Cream

Directions

  1. 1 Peel and core apples. Cut into thin slices; cut each slice in half crosswise. Melt butter in medium skillet over medium heat. Add apples; cook 2 minutes, stirring frequently.
  2. 2 Add brown sugar, cranberries, cinnamon, apple juice and brandy; cook 6 to 8 minutes or until apples are tender and sauce is of desired consistency, stirring occasionally.
  3. 3 To serve, spoon ice cream into individual dessert dishes. Spoon apple mixture over ice cream.
