Great flavor! The first time I made this, I somehow skipped the baking soda. The resulting 4 mini-loaves were really dense and apple-intense; my husband ate a whole loaf himself. I remade the bread recipe correctly, and got a true bread texture. Will try it again with half the baking soda to see if there's a good middle ground. Not too thrilled with the glaze instructions; boiling for 2 minutes, even with constant stirring, left the glaze with a scorched flavor that was not pleasant. Just microwaved some caramels with milk on 2nd try; much better.

I made this for Thanksgiving a few days prior and everyone loved it!!! I made a couple of changes that weren't major. I added about 25-30 soft caramels to the bread mixture and I also substituted raisins instead of the pecans. I do suggest making this a couple of days prior to when you'll eat it mainly because the bread has a better flavor if you wait a few days. It was so good, I had family members begging for the recipe. I will definitely make this again.
