Made these cookies twice this week to rave reviews. Great tasting cookie and easy to make. Great workable cookie dough. I use white chocolate chips for the topping with a few drops of vegetable oil to drizzle over the top. This would be a wonderful cookie to make with children. Will definitely make again!!

This was a great recipe! It reminded me of the "turtle candies" I altered the recipe in a few ways. I used egg beaters, instead of eggs. I used real butter instead of margine. I would suggest only using a 12oz bag of rollos and make the cookies small. I would also suggest refridgerating the dough in between batches of baking....as it helps it mold to the candies. I would not add the tablespoon of sugar to the pecans, this does not help the pecans stick to the dough. The cookies do not spread that much, I was able to get about 16 cookies on a sheet. Also, instead of using vanilla candy for coating, I used carmel sryup- the kind for ice cream.....that truly makes it a turtle candy cookie.

Everyone loves the chewy caramel filled cookies! I always get asked for the recipe as well. They are very easy to make and they store well. And besides, it gives my husband a job to do, he opens up the Rolo's :)

These cookies have been a family favorite for several years, and friends always ask for the recipe. They''re moist and chewy, and the caramel center is a yummy surprise. For the past few holiday seasons, we''ve made these cookies for gifts and swaps, and made them even more festive by tinting the white chocolate red or green for the drizzle on top.
