Made this years ago and loved it so much, I do it every year for Fall desserts...I use red delicous apples and leave the peels on...makes a gorgeous pie...

Oh my. I made this pie during my one hour lunch break (I work at home). From peeling/slicing the apples to putting it in the over. Not difficult or too time-consuming at all. Four hours later, I had my dessert first with a scoop of ice cream! HA. Just couldn't wait. It is absolutely delicious. I would not add extra pecans on top as I feel the pecans within the pie itself were enough, and crunchy too. I also did add the caramel filling to the sugar/spice mix, mixed it up and added the apples and tossed for a minute to coat well before assembling.

My family LOVES LOVES LOVES this pie but I made a couple of changes. I use all the same ingredients but the pecans I sprinkle in the bottom crust before baking and the caramel I use 1/2 cup and mix it in with the apple mixture inside the pie. Then I put the top crust on and bake as directed. It is FABULOUS. And I've gotten rave reviews everywhere I take it, I've been asked for the recipe, I mean people absolutely love this pie.
