Caramel Apple Cider Cups

Granola adds a delicious crunch to a sweet apple cider cookie cup.

Ingredients

1 - Pillsbury® Refrigerated Sugar Cookie Dough 16.5 oz roll
1
pouch spiced apple cider instant drink mix
30
wrapped caramels
2
tablespoons water
1
cup granola

Directions

  • 1 Preheat oven to 350 degrees. Use ungreased, mini muffin pan.
  • 2 Combine cookie dough and pouch of cider mix in bowl.Place teaspoon (approx) of cookie dough in each muffin cup, press gently down on dough to cover bottom of cup. Bake for 12 minutes or until golden brown.
  • 3 While cookies are baking, unwrap caramels and place in microwave safe bowl. Add 2 tablespoons water. Melt caramel in microwave in 30 second intervals. Stir to combine caramel and water. Once caramel is melted, add 1/2 cup granola and stir. Set aside. You will want the caramel to be warm but not hot when you put it into the cookies.
  • 4 Once cookies are done, use the handle of a wooden spoon to gently create a cup. Spoon caramel and granola mixture into each cup. Top each cup with remaining 1/2 cup of granola.
  • 5 Allow to cool and remove gently from muffin pan.
