Caprese Pesto Margherita Stackers

These party appetizers taste incredibly upscale, but they are actually easily prepared using mozzarella balls and Pillsbury® refrigerated breadsticks.

This was wonderful! Instead of pesto - I brushed the inside of the breading with balsamic vinegar, olive oil and finely chopped basil. I used crescent rolls and mini mozzarella balls. I used a mini muffin tin for bite size appetizers! They were beautiful and delicious!

Garlic pesto....YUMMY! How easy, yummy, cute, and wonderful are these little bites from heaven? How about using the sundried tomato pesto??? Thinking I may give that a try for our next family get together!

although the presentation was good I thought they were a little tasteless. I would not make these again

These were a wonderful appetizer for a church function. They are a very beautiful presentation and taste delicious too! Yes, keeping the cheese chilled helps and don't get the pesto oil on the edges that you are trying to seal, but that's pretty basic. Wonderful recipe overall.

Yarmie-- You do have to make sure the edges are well sealed. I get better each time I make it! I keep the cheese well chilled until I'm ready to use it. After draining and drying the cheese, I put it in the freezer while preparing the remaining ingredients. I also put my mini-muffin pan on a cookie sheet just in case the cheese oozes a little bit.

I followed the recipe, trying to be careful to seal the ends carefully knowing if the oil from the pesto touches the ends the dough will not seal. There was smoke coming from the stove because the cheese cooked over the pan, and into the oven. I had to take them out three minutes early because of the smoke. My friends at the party still liked them, calling them the "undercooked and oversmoked mozzarella balls". I'm going to try them again, hope I have better luck next time.
