Caprese Biscuit Stackers

Blogger Brooke McLay from Cheeky Kitchen takes all the traditional elements of caprese salad—mozzarella, basil and tomatoes—and stack them together to make this delicious recipe. Perfect for an easy appetizer, brunch or lunch!

can Pillsbury™ Grands!™ Jr. Golden Layers® refrigerated flaky original biscuits
1/2
cup mayonnaise
1/4
cup chopped fresh basil leaves
Juice of 1 lemon
Ground black pepper to taste

thin slices mozzarella cheese
2
yellow tomatoes, thinly sliced
2
orange tomatoes, thinly sliced
4
red tomatoes, thinly sliced
Fresh basil leaves

cup balsamic reduction sauce
  • 1 Bake biscuits as directed on can. Cool. With sharp knife, cut each biscuit into 3 layers.
  • 2 In small bowl, stir together mayonnaise, chopped basil and lemon juice. Add pepper to taste.
  • 3 To make each biscuit stacker, spread mayonnaise mixture on bottom layer of biscuit. Top with 1 slice of cheese and 2 tomato slices. Add center layer of biscuit; spread with mayonnaise mixture. Top with 2 tomato slices, basil leaves and top layer of biscuit.
  • 4 Place biscuit stackers on platter. Drizzle stackers with balsamic reduction sauce. Serve immediately.
