Candied Fruit Drops

Ingredients

  • 1 cup butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 box (8 oz) chopped dates (1 1/2 cups)
  • 1 cup chopped candied green pineapple
  • 1 cup chopped candied red cherries
  • 1 1/2 cups chopped pecans

Steps

    Heat oven to 350°F. In large bowl, beat butter and brown sugar until light and fluffy. Add egg; blend well. Add flour, baking soda and salt; mix well. Stir in dates, candied fruit and pecans. Drop by teaspoonfuls onto ungreased cookie sheets.

    Bake 10 to 12 minutes. Cool 1 minute; remove from cookie sheets. Cool completely.

  • Dates and candied fruit make these drop cookies wink at you with color, and they're very chewy and moist!
