cups torn romaine lettuce

boneless, skinless chicken breasts (3/4 lb), cooked, cut into bite-size pieces

oz Canadian bacon, sliced, cut into thin strips (1 cup)

medium green onions, sliced (6 tablespoons)

medium tomato, chopped (3/4 cup)

Vinaigrette

cup balsamic vinegar

tablespoons canola or soybean oil

teaspoon Dijon mustard

clove garlic, minced

Directions

  1. 1 In large bowl, mix salad ingredients.
  2. 2 In small bowl, mix vinaigrette ingredients until well blended. Just before serving, pour vinaigrette over salad; toss gently.
