bone-in pork loin chops, 1/2 inch thick (about 1 lb), trimmed of fat

teaspoons salt-free extra-spicy seasoning blend

teaspoons vegetable oil

medium onion, sliced

can (14.5 oz) zesty diced tomatoes with jalapeño peppers, undrained

  • 1 Sprinkle both sides of pork chops with seasoning blend. In 12-inch nonstick skillet, heat oil over medium-high heat. Add onion; cook about 2 minutes, stirring occasionally, until slightly tender. Push onion to one side of skillet.
  • 2 Add pork to other side of skillet. Cook about 3 minutes, turning once, until browned. Add tomatoes. Heat to boiling; reduce heat. Cover; cook 4 to 8 minutes or until pork is no longer pink in center.

I made this for my family and we still sit together at dinner table and no one is to eat until we are all seated and prayer is completed. On this night my son of 9 yrs old when I was on my way to my seat his mouth was so full of the pork chop and his plate only had 1 little piece left I could only laugh. His dad thought I only gave him a tiny bit as for him not to complain about dinner, but that was not the case. Once we were seated my son looked at me and said "mom, I am sorry but this is so good I couldn't help myself. This is a do again for-sure and may I have more meat." We all said by f
