Dipping the pieces of chicken or fish first in the milk allow the crumbs to form a light coating. For a heavier breading, dip the pieces first in flour, then milk, then coating.
Keep this seasoning blend on hand to quickly flavor recipes. Combine ingredients and seal mixtures in airtight container. Store the Cajun Seasoned mixture in the pantry.
Experiment with your favorite seasonings and crumbs. For example, taco seasoning, curry powder or herbs de Provence can be combined with crushed corn flakes, cornmeal, potato flakes or dried bread crumbs.
