lb extra-lean (at least 90%) ground beef

cup finely chopped celery
1/2
medium onion, finely chopped (1/4 cup)

cup finely chopped green bell pepper

teaspoons Cajun seasoning or 1/4 to 1/2 teaspoon ground red pepper (cayenne)

diagonal slices French bread (3/4 inch thick)

cups chopped curly endive (chicory) or dandelion greens
1/4
cup mesquite or hickory smoke-flavored barbecue sauce

  • 1 Heat gas or charcoal grill. In large bowl, mix ground beef, celery, onion, bell pepper and Cajun seasoning. Shape mixture into 4 flat oval-shaped patties, 1/2 inch thick.
  • 2 When grill is heated, place patties on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 11 to 13 minutes, turning once, until patties are no longer pink in center and juice is clear and thermometer inserted in center of patties reads 160°F.
  • 3 To serve, top 4 slices of bread with endive and patties. Spoon 1 tablespoon barbecue sauce on each patty. Cover with remaining bread slices.

This was a nice change to regular burgers. I didn't have the fresh herbs or cajun seasoning so I used Adobo and they turned out pretty good. It's good that you're getting your vegetables hidden in your burger and anything with barbeque sauce is good!
