Cacciatore with a Twist

Ingredients

teaspoons olive or vegetable oil

medium onion, sliced

small green bell pepper, cut into strips

garlic cloves, minced

fresh turkey breast slices (about 1/2 lb.), cut into strips
3
oz. (1 cup) uncooked rotini (spiral pasta)

(15-oz.) can tomato sauce
1
(15-oz.) can garbanzo beans, drained, rinsed
3/4
teaspoon dried oregano leaves

  • 1 Heat oil in large nonstick skillet over medium heat until hot. Add onion, bell pepper, garlic and turkey; cook and stir 5 to 10 minutes or until turkey is no longer pink.
  • 2 Meanwhile, cook rotini to desired doneness as directed on package.
  • 3 Add tomato sauce, beans and oregano to turkey mixture; mix well. Bring to a boil. Reduce heat; cover and simmer 10 minutes or until thoroughly heated.
  • 4 Drain rotini. Serve turkey mixture over rotini.
