I am from the Buffalo area and the joke around here are recipes that call anything spicy or orange flavored "Buffalo" and this includes using Ranch dressing or other things instead of blue cheese. If you want it to be somewhat authentic use Franks Hot Sauce which is what is used here. Since this is a pizza I would suggest just adding a few blue cheese crumbles on top or better yet a thin layer of Blue Cheese dressing on top of crust. I know people can be very defensive of their regional food and I am obviously just as guilty but this would be laughed at if I tried to serve it as is.
