cup butter or margarine, softened

teaspoon vanilla

cup all-purpose flour

cup whole wheat flour

teaspoon baking powder

cups old-fashioned oats

  • 1 Heat oven to 350°F. In large bowl, beat brown sugar and butter with electric mixer on medium speed, scraping bowl occasionally, until light and fluffy. Beat in vanilla and eggs until well blended.
  • 2 On low speed, beat in all-purpose flour, whole wheat flour and baking powder, scraping bowl occasionally, until well combined. Stir in oats.
  • 3 On ungreased cookie sheets, drop dough by heaping tablespoonfuls 2 inches apart. Flatten cookies to about 1/2-inch thickness.
  • 4 Bake 12 to 14 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

Expert Tips

If you haven't used your brown sugar in a while and it's gotten hard, just seal it in a plastic bag with an apple wedge for a day or two to soften, then throw away the apple.

Store whole wheat flour in the refrigerator or freezer to keep it at its best.

I used splenda brown sugar instead... 3/4 cup plus 2 tablespoons, like someone else said... and yes it only takes about 10 min prep time. The best oatmeal cookies ever... I make sheet cookies so I put them in a pan for about 10 min at the same temp.

Turned out real good. I used splenda brown sugar & tasted great.Not sure why is says 55 min for prep time though. Took me about 10 mins.

This recipe reminds me of the cookies my mother used to bake every Friday so us kids would have something to snack on over the weekends.

I'm not a big oatmeal fan but the people I made this for are and could not say enough about how good these cookies were! They kept eating them and they were all gone in ONE night! Delicious!

Best Oatmeal Cookie recipe we've ever tried! We added cranberries, they are AWESOME!
