Ingredients

FISH

lb. red snapper fillets

teaspoons oil

SALSA

1/2
cup finely chopped seeded and peeled cucumber
1/4
cup chopped green bell pepper
2
tablespoons sliced green onions
1
tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes
1
teaspoon sugar
1
teaspoon grated lime peel, if desired
1
tablespoon lime juice
1/8
teaspoon hot pepper sauce

Directions

  1. 1 Line 15x10x1-inch baking pan with foil; spray with nonstick cooking spray. Pat red snapper fillets dry with paper towels; brush with oil. Place, skin side up, on sprayed foil-lined pan.
  2. 2 Broil 4 to 6 inches from heat for 10 to 12 minutes or until fish flakes easily with fork, turning once.
  3. 3 Meanwhile, in medium bowl, combine all salsa ingredients; mix well. Serve salsa over fish.
