Broiled Red Snapper with Cucumber Salsa

Dinner ready in 15 minutes! Enjoy tender fish fillets broiled to perfection and topped with a zesty salsa.

Ingredients

FISH

lb. red snapper fillets

teaspoons oil

SALSA

1/2
cup finely chopped seeded and peeled cucumber
1/4
cup chopped green bell pepper

tablespoons sliced green onions
1
tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes

teaspoon sugar
1
teaspoon grated lime peel, if desired

tablespoon lime juice
1/8
teaspoon hot pepper sauce

Steps

  • 1 Line 15x10x1-inch baking pan with foil; spray with nonstick cooking spray. Pat red snapper fillets dry with paper towels; brush with oil. Place, skin side up, on sprayed foil-lined pan.
  • 2 Broil 4 to 6 inches from heat for 10 to 12 minutes or until fish flakes easily with fork, turning once.
  • 3 Meanwhile, in medium bowl, combine all salsa ingredients; mix well. Serve salsa over fish.

Expert Tips

To seed a cucumber, cut it in half lengthwise and scrape out the seeds with a teaspoon. The job is even easier with a serrated-tipped grapefruit spoon.
