Broccoli with Sweet Red Pepper and Garlic

tablespoon olive or vegetable oil

cloves garlic, finely chopped

cups broccoli florets

large red bell pepper, coarsely chopped (1 cup)

small onion, coarsely chopped (1/2 cup)

tablespoons water

teaspoon salt

tablespoon shredded Parmesan cheese

Directions

  1. 1 In 12-inch nonstick skillet, heat oil over medium-high heat.
  2. 2 Stir garlic into hot oil. Immediately add broccoli, bell pepper, onion and water. Cook 4 to 6 minutes, stirring constantly, until broccoli is crisp-tender and onion is beginning to brown. Stir in salt.
  3. 3 Place in serving dish; top with cheese.
