Broccoli-Cheese Bites

Ingredients

Vegetable oil for deep frying

teaspoons vegetable oil

medium onion, chopped (1/2 cup)

cups baking mix
1
container (8 oz) sour cream

eggs

cup shredded Cheddar cheese (4 oz)

cup chopped fresh broccoli florets
1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon salt

jar (2 oz) diced pimientos, drained
  • 1 In deep fat fryer or 3-quart heavy saucepan, heat 1 1/2 inches oil to 375°F.
  • 2 In 8-inch skillet, heat 2 teaspoons oil over medium-high heat. Cook onion in oil 5 minutes, stirring occasionally, until tender.
  • 3 In large bowl, stir baking mix, sour cream and eggs until blended. Stir in onion, cheese, broccoli, red pepper, salt and pimientos.
  • 4 Drop batter by tablespoonfuls into hot oil. Fry 1 to 2 minutes, turning several times, until golden brown. Drain on paper towels. Serve hot.
