pork boneless loin chops, 1/2 inch thick (about 2 lb)

  • 1 In shallow dish, mix baking mix, cracker crumbs, seasoned salt and pepper. In another shallow dish, beat egg and water with fork
  • 2 Dip pork into egg mixture, then coat with baking mixture.
  • 3 In 12-inch nonstick skillet, heat oil over medium-high heat. Add pork; cook 8 to 10 minutes, turning once, until no longer pink in center.

Bisquick baking mix was the baking mix tested with this recipe. It makes a great coating for chops, chicken and fish.

these were pretty good for a winter time meal, i prefer pork chops on the grill but i live where it snows so this works for that weather. didn't have saltines so i used ritz and it worked well.
