Bourbon Pot Roast

Ingredients

  • 1 lb potatoes, cubed
  • 4 carrots, cut into 1-inch chunks
  • 1 beef roast (3 lb)
  • 1/2 cup bourbon
  • 1/2 cup water
  • Salt and pepper

Steps

    In 4- to 5-quart slow cooker, layer potatoes and carrots. Place beef roast on top. Pour bourbon and water directly over beef. Season with salt and pepper.

    Cover; cook on Low heat setting 7 to 8 hours.

    With slotted spoon, remove beef and vegetables from slow cooker. Let rest 15 minutes before cutting beef into slices.

  • For a slightly sweeter take, add 1 tablespoon honey to the slow cooker with the bourbon and water.
  • Save leftovers for some delicious “Bacon-Bourbon Sliders
