Ingredients

lb potatoes, cubed

carrots, cut into 1-inch chunks

beef roast (3 lb)
1/2
cup bourbon
1/2
cup water
Salt and pepper

Directions

  1. 1 In 4- to 5-quart slow cooker, layer potatoes and carrots. Place beef roast on top. Pour bourbon and water directly over beef. Season with salt and pepper.
  2. 2 Cover; cook on Low heat setting 7 to 8 hours.
  3. 3 With slotted spoon, remove beef and vegetables from slow cooker. Let rest 15 minutes before cutting beef into slices.
