Try this simple pot roast recipe for an easy dinner with few ingredients.

Ingredients

lb potatoes, cubed
4
carrots, cut into 1-inch chunks
1
beef roast (3 lb)
1/2
cup bourbon
1/2
cup water
Salt and pepper

Steps

  • 1 In 4- to 5-quart slow cooker, layer potatoes and carrots. Place beef roast on top. Pour bourbon and water directly over beef. Season with salt and pepper.
  • 2 Cover; cook on Low heat setting 7 to 8 hours.
  • 3 With slotted spoon, remove beef and vegetables from slow cooker. Let rest 15 minutes before cutting beef into slices.

Expert Tips

For a slightly sweeter take, add 1 tablespoon honey to the slow cooker with the bourbon and water.
