loaf (32 oz) prepared cheese product, cut into large cubes
1/4
cup butter
4
cups whole milk
1
package (16 oz) elbow macaroni
2
cups shredded sharp Cheddar cheese (8 oz)

cups small cherry tomatoes
1
bag (9 oz) fresh spinach
1
lb bacon, crisply cooked, crumbled
1
cup Progresso® plain or Italian-style panko crispy bread crumbs

  • 1 In large microwavable bowl, place cheese cubes, butter and milk. Microwave uncovered on High 8 to 10 minutes. Stir with whisk; microwave on High 4 minutes longer. Stir again; repeat microwaving until all cheese is melted and mixture can be stirred smooth, a total of about 15 minutes.
  • 2 Heat oven to 350°F. Cook macaroni in boiling salted water 3 minutes less than directed on box (macaroni should be firm). Drain; place in 15x10-inch (4-quart) glass baking dish. Pour melted cheese sauce over macaroni; mix well. Stir in shredded cheese, tomatoes and spinach.
  • 3 Cover dish with foil; bake 30 minutes. Uncover; sprinkle bacon and bread crumbs evenly over top. Bake 5 minutes longer or until top is lightly browned. Cool at least 10 minutes before serving.

Expert Tips

A little chopped sautéed onion can be added for variety along with a little ground mustard.

The cheese sauce can also be melted in a saucepan on the stove in place of the microwave.

My husband, oldest son (16 yrs) & I thought this sounded so good. I figured my younger 2 kids would either love it or hate it. They hated it. My husband, son & I thought it was good but the whole box of velveta & the sharp cheddar was just too much. I plan on making it again but cutting the cheese in half. The idea is great though.

I really wanted to like this recipe because I don't like all the negative reviews made by people that didn't even try it. But I'm sorry, I didn't. On a convience level, this is super easy. I was amazed at what came out for the little amount of work that I did. And it would be a big kid favorite, but I have to eat, too. And frankly, the taste of the "loaf of processed cheese product" was pretty overwhelming and not at all delicious. Maybe I had higher expectations than I should have.

Make this for a bacon festival party! It was all gone in no time. It was so good! I have shared the recipe and plan on making it again!!!! What a great find!!

I made this for my guests last week and it was wonderful! What a great idea to add veggies to mac and cheese! I will definitely make it again and try it on our church next fifth Sunday fellowship.

for Wendy106..... The only "loaf" cheese I know of would be Velveeta.
