cans (15 or 15 1/2 oz each) black-eyed peas, drained, rinsed

oz Monterey Jack cheese, cubed

medium yellow bell pepper, cut into 1-inch-long julienne strips

medium tomato, coarsely chopped

cup chopped fresh parsley

cup chopped red onion

cup reduced-calorie Italian dressing

cups torn lettuce

  • 1 In medium bowl, gently mix all ingredients except lettuce. Refrigerate until serving time.
  • 2 Just before serving in large bowl, place lettuce; spoon salad over lettuce. Stir just to combine.

Cheddar cheese can be substituted for the Monterey Jack. Or, if an additional guest is coming, add 8 oz Cheddar cheese cubes to extend the salad.

The crunch of iceberg lettuce is good in this salad but Bibb, romaine or a blend of greens will work.

My wife and I enjoy making this salad when the weather heats up. It is crisp, refreshing and enough for a meal for four. Modifications: * Leave out the italian dressing or substitute with a homemade dressing * Substitute great northern beans if canned black-eyed peas are scarce (as at our grocer) Today we're trying dried black-eyed peas, yet they require 8 hours of soaking, 1.5 hours of simmering, followed by cooling, before beginning the salad.
