This recipe was a nice change of pace for enchiladas. It seemed lighter since there was no cheese inside the enchiladas, just on top. And the goat cheese was a great touch.

Made this today and it was very good! I doubled the amount of ground beef, taco seasoning, and black beans. I also added extra enchilada sauce. The salsa and onions on top really add alot of flavor. I will definitely make this again.

Huge hit with my hubby, but not so much with my kiddos. I asked my teen to run to the store for some goat cheese & I should have kept it on the down-low. Only my little ones tried it & said it was "OK." They were not thrilled, but we loved it. I already decided to make it for the adults & have tacos for the kids next time.

This meal was a big hit, and I made it healthier. I used whole wheat low fat low sodium tortillas, 99.9% fat free ground turkey (shred a potato into the meat while cooking and it keeps it super moist), I used low sodium taco seasoning, and greek yogurt instead of sour cream. Very delish, I will definitely make this again.

This recipe was good. Am going to make it for church one of these days. I think it will go over well. Didn't use the goat cheese but did put some blue cheese in it. Easy and good!

This recipe was good. Next time I think I'll try making it with corn tortillas instead of flour tortillas. Also, I skipped the goat cheese and scallions as those aren't my favorite. Easy and quick!

This dish was delicious & easy to cook! It has been added to my favorite recipes! I didn't use garlic clove or goat cheese & it was still fabulous; it doesn't need those!

Great Mexican meal! Accidentally bought hot enchilada sauce and it was still yummy - but definitely had a kick. Will make again for sure!

Great recipe. My family just raved over it. When I make it again, going to make an extra one to put in the freezer for later. Very Good.

I wanted to make this dish for an upcoming retirement lunch at work so I decided to try it out at home first. My daughter and her best friend (both 11) were my taste testers and both loved it and had seconds. The lunch is this week and I will be making the enchilada for sure. They tasted great and were very easy to make.
