I thought this was excellent! I paired it with the Bakeoff's Southwestern Chicken Rollups and it really went well together. I cheated a little bit and used a prepared red wine vinigrette for the greens. Will be making this again.

This is a bit of a time consuming recipe, which requires quite a few ingredients, but I think it is definitely worth the time - - wonderful, wonderful flavors and it looks so beautiful and healthy, it''s a delight to serve. My best friend and I made this recipe one weekend and also the Fudge Strawberry Cream Torte. These two strike me as the best recipes from this BakeOff competition - - both unique, original and special tasting.

This was just delicious. It is easy to make and I like it for lunch or an after school snack. My daughter likes it as well. These are ingredients I always have on hand so there are not special trips to the store. This recipe is a winner. I will make it again and again.
