I used leftover frozen seasoned french fries, just chop them up. Add in fresh garlic, onions and extra cheese of my favorite blend. Used only 2 eggs but they were huge eggs. I liked the ham flavor. For low sodium, use your own cooked vegetables/potatoes and less/no ham. You can use a low sodium turkey sausage cooked up and drained. Canned biscuits work, but taste different from frozen.

I just made this tonight for dinner, and it was a big hit ! As another reviewer suggested, I used canned potatoes, and added my own fresh diced green pepper and onion. I also used mozzarella cheese, since that's what I had in the house. I did use more egg than the recipe called for, since I was using an 8-inch square baking dish, I didn't think 2 eggs would be enough. I also layered mine -- I put the biscuits on the bottom, then the pepper and onion, then the meat (I used leftover corned beef) and then the cheese, and poured the eggs over the top of it. Came out scrumptious, though it was

That looks REALLY good. Is there any way to make it lower sodium though? That's a little too much sodium for me!

I used canned potatos and added bell pepper in small pieces for add flavor and color. Great topped with sour cream. Very easy and convenient. Doubled the recipe since we have a teenager at home.

I made Corned Beef last night, and had some leftover so I decided to add it to this recipe. I also add Swiss cheese instead of the Cheddar cheese. It was the best.

This was super yummy! My 3 yr old who is a picky eater pretty much cleaned his plate! Will have to triple the recipe for when the hubby is around to make for him and the gang! 'Cept I left out the frozen potatoes, onions and peppers. I just chopped up fresh potatoes in small dices and turned out just fine!
