I made this last night and I really like it! I used Fosters beer( Any premium beer would work, The Ale one person mentioned might throw off the soup's flavor due to Ale's bitterness) I cooked the veggies and flour in a big skillet, then moved everything to a crock pot. It was wonderful!

You can lower the calories by using less butter and an equal quantity of flour (2 tbsp butter with 2 tbps flour, for example). Also can sub out the whipping cream with something like half and half or evaporated milk. Going fat free will make it a little less rich tasting, but still will be good. Just like they say for wine, only use a beer you would drink. What kind doesn't matter, it's to your own taste.

AngelaS72, you can lower the calories by using light beer and low/no fat cheese, but don't expect it to taste the same. A once in a while splurge won't kill anyone. I don't think this is meant as an everyday dish.

We absolutely love beer cheese soup! This was fun to make, but we had to add a bunch of stuff to it because it tasted bland to us. We added more cayenne pepper, seasoned salt, tabasco, and garlic. We also used a little more cheese and flour to thicken it. We'll keep playing with it though!

This soup tasted amazing until I added the beer. I researched what kind of beer compliments Sharp Cheeder cheese so I used Sierra Nevada Pale Ale. I thought it had a "funny" taste. Maybe next time I'll omit the beer and use this for potato or broccoli cheese soup because the soup was fabulous without the beer. However, it was a bit thick so if anyone does this you'll want to only add 1/2 c of quick mixing four. Does anyone suggestions on what kind of beer to use? I love beer cheese and still want to learn how to make it? Maybe a stout?

I thought this sounded like a good addition to a simple supper till I saw there was 790 calories per serving. I wont even try it now. Shouldnt there be more of a focus on keeping meals healthy.
