Instead of making turkey gravy I added more beer to the drippings and then added a carrot, 1 celery stalk, 1/2 medium onion (all diced fine) and 3 boxes of stove top stuffing.

I like to ensure my meats are seasoned right through, so what I did was prepared the turkey five hours before I planned to roast it (following steps 1 and 2 in the recipe).
Then I placed the pan with the turkey in a roasting bag and put it back in the the refrigerator until cooking time(I placed the turkey in a roasting bag to prevent cross contamination of the other foods in the refrigerator). After that, I just removed the bird from the bag and followed steps 3 and 4 making another deviation in step 5. Due to limitations this has to be another tip.

Thank you for this recipe. My sister is allergic to citrus fruits so I was looking for a recipe that did not require lemon, lime or orange juice.
This was a great hit, the juiciest Turkey I ever roasted. The aroma of the rosemary and beer coming from the oven was stimulating. Even my fickle 5 year old daughter was asking for seconds and licking her fingers. (see my tips)

We have never made turkey dinner before. We tried this one last year (2009)as there were few ingredients and looked very easy. and it was awesome.... Making it again this year (2010)...

I prepared this recipe for my boyfriends family in 2009. Everyone loved this recipe! I am going to prepare this recipe again in 2010!
