packages (3 oz each) beef-flavor ramen noodle soup mix
1
lb lean (at least 80%) ground beef

slices pepperoni (1 to 1 1/4 inches in diameter)
1
can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1
cup water
1
small green bell pepper, cut into 1/2-inch pieces (1/2 cup)
1
cup shredded mozzarella cheese (4 oz)

  • 1 Break blocks of noodles in half (reserve one seasoning packet; discard second packet); set aside. In 10-inch skillet, cook beef and pepperoni over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • 2 Stir tomatoes, water and reserved seasoning packet into beef mixture. Heat to boiling. Stir in noodles and bell pepper. Cook 3 to 5 minutes, stirring occasionally, until noodles are tender.
  • 3 Sprinkle cheese on noodle mixture in ring around edge of skillet. Cover and let stand about 5 minutes or until cheese is melted.

Definitely not something I would have thought of making on my own.Wasn't sure how it was going to turn out. My fiance and I really enjoyed it! A twist to the traditional boring ramen noodle!

Simply wonderful recipe...we love the ramen taste. I hadn't bought ramen since college, but nothing I made back then tasted this great! The kids love it as much as hubby and I do. :)

I loved this recipe! i have it in my tried and true to repeat recipes! Its simple, easy and tastes good. I am going to doctor it a bit and do it without the pepperoni since my guys dont like pepperoni. Maybe add some italian sausage instead. Its a great base recipe to play with and chance up how you like also!

This is a very easy and inexpensive meal to make. You can make it ahead of time and slide it in the oven to keep warm. My kids love it.

I added chopped onion and zucchini to it. So easy to make and is a hit at all the get togethers we have taken it to.
