Beef Mixture

(1-oz.) pkg. Old El Paso® Taco Seasoning Mix

tablespoons lime juice

tablespoon honey
1
lb. boneless beef sirloin steak, cut into thin bite-sized strips
1
large onion, cut into thin wedges
2
medium yellow, green and/or red bell peppers, cut into thin lengthwise strips

Salsa

Reserved 2 teaspoons Old El Paso® Taco Seasoning Mix
1
medium tomato, chopped
1
medium avocado, pitted, peeled and chopped
2
tablespoons finely chopped red onion
2
teaspoons lime juice

Tortillas

(6-inch) flour tortillas, heated

  • 1 Reserve 2 teaspoons taco seasoning mix for salsa. In shallow glass baking dish, combine remaining taco seasoning mix, 3 tablespoons lime juice and honey; mix well. Add beef strips; toss to coat. Let stand at room temperature for 15 minutes to marinate.
  • 2 Meanwhile, in medium bowl, combine reserved taco seasoning mix and all remaining salsa ingredients; mix well. Set aside.
  • 3 Spray large nonstick skillet with nonstick cooking spray. Heat over high heat until hot. Add beef and marinade; cook and stir 2 minutes. Add onion wedges; cook and stir 2 minutes. Add bell pepper strips; cook and stir an additional 1 to 2 minutes or until beef is of desired doneness and vegetables are crisp-tender.
  • 4 Spoon about 1/2 cup beef mixture down center of each warm tortilla; roll up. Serve with guacamole salsa and if desired, sour cream.

Made this tonight for my mom and I. The salsa is absolutely delicious and very easy to make. Will definitely be making this again.

I made this last night, and had some friends over...they LOVED it! It was fast and easy to make. And the very easy Guacamole Salsa was great. I made 1 dish with steak and another with chicken, it worked.
