This was exactly the way it was described in the recipe. However, they were huge, and I should have split one with my husband. I served these with salsa and reduced fat sour cream.

When you say drain well, you mean super dry! The filling had a few tablespoons of liquid from the tomatoes and when I put it on the pie crust, it disintegrated!

I used cooked turkey and root veggies for the filling. I also used a 2 inch round cutter to make circles out of the pie crusts. They were a big hit at the party I went to. The dough turned out moist and flaky. Because I went with a smaller cutter, the recupe produced 16 empanadas. Will definitely make again w/different fillings.

Delicious and easy. Can't wait to experiment with other fillings. The only thing I will do differently is to cut it into quarters before baking. It is too big and awkward to transfer to another platter from the baking pan and as it cools on the baking pan it sticks. Also do not want to cut it while on the baking pan for fear of putting knife marks in the pan.

Really good... Although I am out of Chili powder I subbed
3/4 cumin powder/1 1/2 TBS of garlic powder & minced onion
plus a couple of other seasonings and it turned out perfect! this is a must have for our family now
