Ingredients

lb extra-lean (at least 90%) ground beef

can (15 or 15.5 oz) pinto beans, drained, rinsed

package (1.25 oz) 40%-less-sodium taco seasoning mix

cup water
3 1/2
cups reduced-fat nacho cheese tortilla chips (3 oz)
1/2
cup shredded reduced-fat Colby-Monterey Jack cheese blend (2 oz)

medium tomato, chopped (3/4 cup)

cup shredded leaf lettuce
1/2
cup fat-free sour cream
2
tablespoons chopped fresh cilantro

Directions

  1. 1 In 10-inch nonstick skillet, cook ground beef over medium-high heat, stirring frequently, until brown; drain. Stir in beans, taco seasoning mix and water. Heat to boiling. Reduce heat to medium-low; simmer uncovered 1 to 2 minutes or until water is absorbed.
  2. 2 Arrange tortilla chips evenly on individual plates. Spoon beef mixture evenly over chips. Top with cheese, tomato, lettuce, sour cream and cilantro.
