Ingredients

  • 1 lb lean ground beef
  • 1 1/2 cups sliced celery
  • 1 can (16 oz) bean sprouts, drained
  • 1 can ( 8 oz) sliced water chestnuts, drained
  • 1 can (4 oz) mushroom pieces and stems, drained
  • 1 3/4 cups Progresso™ beef flavored broth (from 32-oz. carton)
  • 1 jar (2 oz) diced pimientos, drained
  • 2 tablespoons soy sauce
  • 1/2 teaspoon ginger
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 4 cups chow mein noodles or hot cooked rice

Steps

    Brown ground beef in large skillet over medium-high heat for 5 to 7 minutes or until thoroughly cooked, stirring frequently. Drain.

    Add celery, bean sprouts, water chestnuts, mushrooms, broth, piementos, soy sauce and ginger; mix well. Reduce heat; cover and simmer 15 minutes, stirring occasionally.

    Meanwhile, in small bowl, blend cornstarch and water until smooth.
  • 4
    Stir cornstarch mixture into beef mixture. Cook until mixture is bubbly and slightly thickened. Serve over chow mein noodles. If desired, serve with additional soy sauce.
