Bean and Smoked Sausage Soup

cup thinly sliced celery

cup chopped carrots

(14 1/2-oz.) cans ready-to-serve fat-free chicken broth with 1/3 less sodium

(15.5-oz.) cans great northern beans, drained, rinsed

oz. smoked 95%-fat-free turkey sausage, coarsely chopped

teaspoon dried thyme leaves, crushed

tablespoon chopped fresh parsley

teaspoon pepper

Directions

  1. 1 In large nonstick saucepan, combine onion, celery, carrots and 1/4 cup of the broth; cook over medium heat for 3 minutes or until onion is tender.
  2. 2 Stir in remaining broth and all remaining ingredients. Bring to a boil. Reduce heat; simmer 10 to 15 minutes or until celery and carrots are tender.
