Bayou Sausage Jambalaya

Ingredients

  • 1/4 lb. smoked turkey kielbasa sausage, cut into 1/2- inch-thick slices
  • 2 boneless skinless chicken breast halves, cut into bite-sized pieces
  • 2 cups salsa
  • 1 1/2 cups uncooked instant white rice
  • 1 cup water
  • Hot pepper sauce, if desired

    Spray large nonstick skillet or Dutch oven with nonstick cooking spray. Heat over medium-high heat until hot. Add sausage and chicken; cook and stir 5 to 8 minutes or until chicken is no longer pink.

    Add salsa, rice and water; mix well. Bring to a boil. Reduce heat; cover and simmer 5 to 10 minutes or until rice is tender. If desired, add salt and pepper to taste. Serve with hot pepper sauce.

  • Jambalaya is a Creole dish of rice combined with vegetables, meat, poultry and seafood. The name of the dish is believed to come from the French word for ham, jambon. The earliest version of jambalaya recipes list ham as a main ingredient.
  • Turkey kielbasa adds spice to foods without the extra fat of regular kielbasa.
  • Warm biscuits and peas or green beans go well with this spicy jambalaya.
