Directions

  • 1 Heat oven to 375°F. Line 12 muffin cups with paper baking cups. In medium bowl, combine sugar, oil and eggs; blend well. Stir in bananas and vanilla.
  • 2 Lightly spoon flour into measuring cup; level off. Add flour, baking soda and salt to sugar mixture; stir just until combined. Stir in strawberries. Spoon batter evenly into paper-lined muffin cups.
  • 3 Bake at 375°F. for 17 to 21 minutes or until toothpick inserted in center comes out clean. Immediately remove from muffin cups. Serve warm or cool.

I just made these for the 1st time. Good flavor. Next time I might add some cinnamon in with the dry ingredients. Also, I'm thinking maybe a basic streusel topping. Very easy to transport this way though.

These were by far the best muffin I have ever made. They were moist and had just the right amount of fruit flavor. I made them yesterday and I am making another batch tonight!

I made these last night. They are delicious, very moist and tasty. I added some finely chopped roasted pecans on top.

I used sliced strwaberries I had in my fridge instead. I just drained the juice from them first. This was a very easy recipe to follow and make. None of the muffins made it to the second day, my family loved them.

Good, but not great. Though they were tasty, I was hoping for more flavor. They are easy to make, bake, store, etc. May make these again.
