Streusel Muffins

tablespoons all-purpose flour

tablespoons firmly packed brown sugar

teaspoon cinnamon

tablespoons margarine or butter
1/4
cup chopped walnuts

Directions

  • 1 Heat oven to 375°F. Grease bottoms only of 18 muffin cups or line with paper baking cups. In large bowl, combine 1/2 cup margarine and 1/2 cup brown sugar; beat until fluffy. Add bananas, milk, vanilla and eggs; blend well.
  • 2 Add 2 cups flour, baking powder, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in blueberries. Fill greased muffin cups 3/4 full.
  • 3 In small bowl, combine 3 tablespoons flour, 2 tablespoons brown sugar and cinnamon; mix well. With pastry blender or fork, cut in 2 tablespoons margarine until mixture is crumbly. Stir in walnuts. Sprinkle over batter.
  • 4 Bake at 375°F. for 18 to 23 minutes or until toothpick inserted in center comes out clean. Cool 3 minutes; remove from pan. Serve warm.

Expert Tips

In the supermarket, you're most likely to find large, cultivated blueberries. Wild blueberries are much smaller and often more flavorful. Store blueberries loosely covered in the refrigerator, and use them within a day or two. Pick through fresh blueberries to remove any stems or wilted berries before rinsing and draining thoroughly.

When blueberries are abundant and inexpensive, stock up and freeze them. Arrange berries in a single layer on a baking tray and freeze them. When they're frozen, pop them into a resealable plastic freezer bag or container so you'll be able to pour out the amount needed at a later date.
