This was soooo good! I used 3 medium potatoes as there is just the two of us. I also added a sprinkling of Sea Salt before baking. You may want to foil your pan or spray it too as some of the potato juice blackened and stuck to the pan. This is a recipe I will use often!

I have a VERY picky 6-year-old who won't eat potatoes in any form except as french fries. I was pleasantly surprised when she ate these!! GREAT recipe, and I feel better making these instead of traditional french fries. Thank you for this recipe!
