Baked Potato Pizza

Take all of your favorite flavors from a loaded baked potato, and combine them on a pizza crust. Brilliant!

Ingredients

can (11 oz) Pillsbury® refrigerated thin pizza crust
6
slices (1 oz each) provolone cheese
2
cups cubed unpeeled baked potato (about 1 large)
2
tablespoons olive oil
2
tablespoons ranch dressing and seasoning mix (from 1-oz milk recipe package)
8
strips crisply cooked bacon, chopped
1
cup shredded mild Cheddar cheese (4 oz)
1/4
cup sliced green onions (4 medium), if desired
Sour cream, if desired

Directions

  • 1 Heat oven to 400°F. Spray or grease 15x10-inch or larger dark or nonstick cookie sheet. Unroll dough on cookie sheet; starting at center, press dough into 15x10-inch rectangle.
  • 2 Arrange provolone cheese slices on dough. In medium bowl, mix potato, olive oil and ranch dressing mix. Spoon evenly over cheese. Sprinkle with bacon and Cheddar cheese.
  • 3 Bake 13 to 16 minutes or until crust is golden brown and cheese is melted. Sprinkle with onions. Serve with sour cream.

Just like a loaded baked potato, vary the toppings on the pizza to what you have on hand. Try it with cubed ham instead of bacon, or use a blend of cheeses.

I love this pizza recipe. It's become my favorite and my family loves it. The great thing too is it's a really filling pizza.

This is my favorite pizza to make. Great flavor though I tend to add more of the ranch dressing mix than called for. It's super easy and just as good as one from a pizza place. My husband prefers the Easy Philly Cheesesteak pizza and my kids like the Chicken 'n Bacon Ranch pizza so we usually make a couple and split them.

This is an excellent recipe. My husband and 8 year old request this pizza it seems like at least once a week. Now, my 2 year old isn't crazy about the potatoes, but they are so easy to pick off and that makes it perfect for a picky toddler. I've shared it with many co-workers and everyone raves about it. So simple, so easy and ingredients that are staples in my pantry. Just plain awesome.

I added cooked smoked turkey sausage instead of bacon and sliced harvati cheese to the base with the provolone. The sour cream is the perfect addition.
