plain bagels, split, cut into 1/2-inch pieces

round (8 oz) Brie cheese, rind removed, cut into 1/2-inch pieces

bag (1 lb) frozen bell pepper and onion stir-fry, thawed, patted dry with paper towels

teaspoon dried basil leaves
1/2
teaspoon salt
1/4
teaspoon pepper

  • 1 Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 In large bowl, beat eggs and milk. Add remaining ingredients; mix well. Pour into baking dish. Cover; refrigerate 8 hours or overnight.
  • 3 Heat oven to 350°F. Uncover dish; bake 50 to 55 minutes or until golden brown and center is set.

This strata was developed using standard bagels, which tend to be rather large. When preparing the recipe with small bagels, add an extra half-bagel.

Prepare this strata recipe the next time you have overnight guests--the recipe goes together quickly the night before. The next morning, pop the strata in the oven. While it bakes, there's plenty of time to cut up fruit and set the table.

This recipe is a great way to use up day-old bagels!

This recipe is a nice change from the regular breakfast casseroles. The bagels make for a nice chewy texture, and the pepper mix gives it color and a fresh flavor. I ended up making mine with onion bagels, which gave another flavor dimension. I can't imagine making it with plain bagels like the recipe calls for, since this was just shy of being bland (the reason I gave 4 stars instead of 5). It was very good and an elegant option for a prepare-ahead breakfast casserole. Next time I may throw in some artichokes for another flavor and texture.
