YUM! I made these for a holiday appetizer and they were a big hit! Like a mini breakfast bite! Great for breakfast or brunch!

I made these for Christmas brunch and they were a huge hit! As my sister-in-law said, "They have bacon, cheese and eggs on a biscuit, how could they be bad?"

I just made these. Fabulous! Used 3 eggs, Mexican blend shredded cheese and turkey bacon!
They turned put awesome! I made some without green onions for my son and also added a dash of salt into egg mixture! My husband ate 3! Awesome and easy!

Made these for CHristmas brunch. They were a big hit with my family. They already requested for me to make them again on Easter brunch!

We substituted ham and cheddar cheese for the bacon and swiss. Then added a dash of tabasco. Family loves having the variety.

Can you make these as mini muffins using half a biscuit per muffin cup and if so, would that shorten the baking time? thanks

I make a vegetarian friendly version with shredded carrots, chopped mushrooms, and/or broccoli. Sorry, don't have exact measurements -- I simply add a pinch of each to the egg mixture in the biscuit cup. My meat-hating friends rave over them; and ask for them at every "covered dish" event.

I have made this recipe numerous times and everytime it has been a huge hit. I use the "real" stuff because when it is in such a small quantity I feel it is worth the full flavor of real cream cheese and abundance of bacon. I do add shallots for a little more zip. BB
