Bacon-Avocado Cheddar Melts

Ingredients

Pillsbury® Grands!® frozen buttermilk or southern style biscuits (from 25-oz bag)
2
tablespoons creamy Caesar dressing
2
tablespoons shredded Cheddar cheese
1
small avocado, pitted and peeled
1
medium Roma (plum) tomato, sliced
1
tablespoon bacon bits or chips

Directions

  • 1 Heat oven to 375°F. Bake biscuits as directed on bag; place on cooling rack. Cool 5 minutes. Set oven control to broil.
  • 2 Carefully split each biscuit; place on cookie sheet. Brush cut sides with dressing; sprinkle with cheese. Broil with tops 4 to 6 inches from heat 1 to 3 minutes or until cheese is melted.
  • 3 In small bowl, mash avocado to desired consistency. Spoon avocado over cheese; top with tomato slices, pressing down slightly. Sprinkle with bacon bits.

Purchased guacamole dip may be substituted for the mashed fresh avocado, if a ripe avocado is not available.

Seedless grapes or watermelon slices offer a perfect complement for this meal.

Delicious! Way more than enough for two people. We had herb chicken breast along with the biscuits.

These are very good. Great for a sit down knife and fork snack. I used the Cesaer Dressing with the bacon already in it and just topped each with the tomato. I did not share so I have some in the frig for later! I shall make again.

Subed with soy bacon and vegetarian friends thoroughly enjoyed. Will definately be make again using real bacon.

I made this for dinner one day last week. It was REALLY REALLY good. My husband even asked for 2nds! We WILL be making this again. I'm going to try to make it Weight Watchers friendly so I can stay on track.
