Heat oven to 350°F. Spray 13x9-inch baking dish with cooking spray; set aside. Place sweet potatoes on ungreased 15x10x1-inch pan. In small bowl, beat oil and Sriracha sauce with whisk. Drizzle mixture on top of sweet potatoes; toss to coat evenly.
Bake 25 to 30 minutes or until sweet potatoes are tender. Cool 5 minutes.
Meanwhile, in large bowl, beat eggs, milk and salt with whisk until well combined. Stir in sweet potatoes, bacon and 3/4 cup of the cheese.
Arrange biscuits in baking dish. Pour egg mixture over biscuits.
Bake 28 to 32 minutes or until biscuits are golden brown. Cover with foil; bake 10 minutes longer. Sprinkle remaining 1/4 cup shredded Cheddar cheese over biscuits; let stand 5 minutes before cutting.
