Bacon should be mixed in, not just sprinkled on top. Might need more s & p, might need more eggs, or less potatoes.

I made this for Christmas morning and it was ok. If I decide to make it again, I will use less hashbrowns, more cheese, some type of seasoning and more bacon. Maybe additional bacon in the middle along with the mushroom mixture.

Tried this for Christmas morning and it was a bust! No taste. Definitely need to add salt/pepper. Might do better if bacon was mixed in instead of all on top. Won't have this again.

My family loved it for Christmas breakfast. I left out the peppers though.
I would definitely make again but may use less hashbrowns or a few more eggs. It was a little too potato-heavy.

I made this for an office breakfast party and it was hit. I omitted the mushrooms, onions, peppers and mustard. I made it again for my family and will definitely make again!

This is a very easy recipe and it makes alot of food. My husband loved it!!! I will definitely make it again. My only issue was that it took a little longer than the recipe calls for to get the eggs cooked.

I have made this recipe on several occasions and it has been a big hit. It reminds me of when I used to order a western omelet
at my favorite diner. I usually use the O'Brien hash browns then
I don't have to cut up the onion and peppers. Also, I just use the ready to serve bacon (microwavable). It's not as messy.

Do you thaw the hashbrowns before you mix in the casserole?
