Ingredients

I dz eggs - hard boiled
3
slices of bacon chopped
1/4
teas dried mustard
3
Tbs Mayo
1
Tbs fresh minced chives or 1 teas crushed dried chives
1/3
fresh ground black pepper
sliced green and black olives

  • 1 Sauté the bacon until crisp, remove from pan and drain on paper towel and allow to cool
  • 2 While bacon is cooling peel your cold hard boiled eggs, cut in half length wise.
  • 3 Scoop out the yolk and put them into your food processor.
  • 4 Add the dried mustard, mayo, chives, ground pepper and the bacon to the processor.
  • 5 Pulse to combine thoroughly. Spoon or pipe mixture into egg white halves.
  • 6 Top with the sliced olives. Refrigerate for 30 minutes and serve.

I have a few egg plates I use to serve with, but a good alternative is to place a bed of shredded lettuce on a platter and then set your eggs on that to keep them from rolling around.
