Asparagus with Orange-Chive Sauce

A special side dish is very easy to make with fresh asparagus topped with orange-chive sauce.

lb. fresh asparagus spears, trimmed
1/4
cup orange juice
1
teaspoon grated orange peel
1/2
teaspoon cornstarch
Dash pepper
1
tablespoon chopped fresh chives

  • 1 In large skillet, bring 1/2 inch water to a boil. Add asparagus; return to a boil. Cover; cook 3 to 5 minutes or until asparagus is tender.*
  • 2 Meanwhile, in small nonstick saucepan, combine orange juice, orange peel, cornstarch and pepper; mix well. Cook over medium heat until mixture boils and begins to thicken. Remove from heat; stir in chives.
  • 3 Drain asparagus; place on serving platter. Top with chive sauce.

* If desired, place asparagus spears in steamer basket over boiling water. Cover; steam 3 to 5 minutes or until asparagus is tender.
